Thai cuisine’s vibrant spices, aromatic herbs and rich regional traditions take centre stage at Amari Johor Bahru, where The Taste of ChomSindh by Chef Jo brings a taste of Thailand to diners throughout October.
Hosted at Amaya Food Gallery, the month-long culinary showcase features a specially curated selection of dishes by Chef Jo Aphilak, Executive Sous Chef at Amari Pattaya.

Rooted in traditional Thai recipes and fresh ingredients, the menu celebrates the country’s culinary heritage, from its coastal seafood traditions to the comforting flavours of Northern Thailand.
At the heart of ChomSindh is a family story inspired by a fishing boat once owned by the founder’s grandfather. Weekend fishing trips and family meals featuring the day’s catch eventually inspired the third generation to establish a restaurant celebrating Thailand’s connection to its seas and rivers.

The name ChomSindh, meaning “to view the flowing water”, reflects this heritage, which continues through a culinary philosophy centred on freshness, authenticity and sustainability.
Three signature dishes offer diners a glimpse into this distinctive approach to Thai cooking.
The Squid Ink Rice with Assorted Seafood reflects ChomSindh’s coastal roots, combining dark, squid ink-infused rice with an assortment of seafood. The dish places the flavours of the sea at the forefront, drawing inspiration from Thailand’s fishing traditions and its abundance of fresh marine ingredients.
For those who enjoy bold, aromatic flavours, the Stir-Fried Holy Basil with Prawn delivers a more robust taste experience. Inspired by an old-fashioned recipe featuring Andaman Sea Prawns, the dish combines garlic, coriander root, pepper, holy basil and dried chillies.
The fragrant herbs and spices create a distinctive Thai flavour profile, with the prawns adding a seafood dimension to this popular style of stir-fry.
Meanwhile, Northern Thai Chicken – Chicken Khao Soi introduces diners to the comforting flavours of northern Thailand. Known for its aromatic curry and tender chicken, Khao Soi offers a satisfying contrast to the seafood-led selections, highlighting the diversity of Thailand’s regional cuisine.

Beyond the food, the launch evening celebrated Thai culture through traditional dance performances by Cilik Tari Aliff Johor Bahru, live music by One Avenue Band and a live cooking demonstration by Chef Jo.
Executive Chef Hairi Rahman of Amari Johor Bahru said the collaboration allowed the hotel’s culinary team to explore Thai ingredients, techniques and traditions while exchanging knowledge with Chef Jo.
“From the seafood-led dishes to the bold character of holy basil and the comforting flavours of Khao Soi, the menu gave our guests a taste of the diversity of Thai cuisine,” he said.
Sustainability is also central to ChomSindh’s identity, with initiatives including responsible sourcing from local fishermen, sustainable aquaculture, an urban culinary garden, food-waste composting and efforts to reduce single-use plastics.
Running throughout October at Amaya Food Gallery, The Taste of ChomSindh by Chef Jo offers Johor Bahru diners an opportunity to discover Thailand’s culinary heritage through authentic flavours, regional specialities and the stories behind each dish, bringing a distinctive taste of Thailand to the city.
