Every parents’ worry is always about their children’s education, health and eating habits. With schools reopened, it is a welcome sign to see children feel enthusiastic about learning and having the energy to last the whole day if they have the right kind of food and nutrients.
Like every other parent, preparing lunchboxes can be cumbersome at times, especially if you are pressed for time. Find easy to prepare meals that are not only nutritious but tasty as well. And who says its had to be for kids only, even a busy mom or dad could take a healthy meal to work.
Salmon / Chicken Teriyaki Pasta

Low-sodium soy sauce | ½ cup |
Alce Nero apple cider vinegar | 1 tsp |
Alce Nero honey | 3 tsp |
Large garlic clove, minced or grated | 1 |
Grated fresh ginger, optional | 1 tsp |
Fillets of fresh salmon, skin on (or chicken breast) | |
Cooked Sports Pasta/ or any other types | |
Veggies such as steamed broccoli, grated carrot, and edamame | |
Toasted sesame seeds or sliced scallions (optional) | 1 tsp |
Method
- Mix the soy sauce, vinegar, and honey in a bowl until the honey is dissolved and not sticking to the bottom of the bowl. In a shallow bowl or baking dish, combine half of the soy sauce mixture with the garlic and ginger, if using. Save the remaining sauce to serve with the cooked salmon or chicken. Place salmon flesh side down (or bite-sized chicken pieces) into the marinade and spoon some over the top of each fillet to coat the sides. Set aside for 5 to 15 minutes.
- While salmon/chicken marinades, prepare vegetable and/or side dishes such as rice, noodles or cooked pasta. Place an oven rack at the top position in your oven and preheat the broiler to high. Place marinated salmon skin-side down (or chicken) on a baking sheet lined with foil (I don’t suggest parchment because it could burn).
- Broil salmon/chicken until caramelized, 8 to 10 minutes or till the chicken is cooked but still tender. Depending on the thickness of your salmon, it could be a little pink in the centre still. That’s ok! It will continue to cook as it rests. However, if you are using chicken, do make sure the meat is cooked through.
- Serve salmon/chicken with extra sauce, side dishes and a sprinkle of sesame seeds and sliced scallions, if desired.
