During her residence at Turmeric, Chef De Souza will present a menu celebrating Peranakan (Nyonya) cuisine that originated in the Straits Settlements – diverse and vibrant immigrant communities established in Penang, Melaka and Singapore. The fusion of Chinese and local cultures resulted in dishes that are unique to the region, such as otak-otak steamed fish paste, chicken pongteh and sugee cake, all of which Chef De Souza makes following her great-grandmother’s original recipes.

Guests will also have the chance to try such traditional Nyonya dishes as choon pneah (crispy spring roll), kerabu pucuk paku (fiddlehead fern) and daging buah keluak (beef with pangium fruit), as well as assam hu (steamed fish with tamarind) and creamy tiger prawns and kiam hu kut (vegetable curry in coconut milk with salted fish).

“The hallmark of Nyonya cuisine is a variety of tangy flavours that coexist harmoniously on a plate,” said Fahdrul Abd Malek, Executive Chef at Anantara Desaru Coast. “We love sharing our culinary heritage with guests from around the world and introducing them to different types of flavours that really bring the destination to life.”

The special Nyonya menu from Chef Sharon De Souza will be available from 31st August to 3rd September for both lunch and dinner at Turmeric, which is ranked among top three restaurants in Desaru. Guests at Anantara Desaru Coast can also enjoy signature dining at Sea.Fire.Salt. serving fresh seafood and steaks seaside; poolside Infinity Bar focusing on tapas, light bites and drinks with unobstructed views of the ocean; and Observatory Bar where afternoon tea is poured during the day and smart cocktails arrive after dark alongside 360 views of the resort and surrounding area. More options are available at The Lagoon Pool Bar serving refreshing drinks and snacks.
